Blueberry Muffins



If your child is anything like mine, then they LOVE those mini blueberry muffins. So let’s make them! Perfect for those mornings you don’t feel like cooking! My toddler loved them!

What you’ll need

  • 1 ½ cup of sifted AP flour
  • 1/13 Cup of cake flour
  • ½ tsp baking soda
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon

Wet ingredients

  • ⅓ cup of vegetable oil
  • 1 cup of sugar
  • 2 eggs whisked
  • 6 tbsp of melted butter
  • ⅓ cup of sour cream
  • 1 cup og buttermilk
  • 1 ½ tsp of vanilla
  • Lemon zest
  • 1 cup of blueberries coated in flour
  • Top with brown sugar
  1. Combine dry ingredients in a bowl
  2. In a separate bowl combine your wet ingredients and mixed until combined
  3. Slowly add your dry ingredients into the wet batter and mix until smooth
  4. Add in your coated blueberries, lemon zest and fold into the batter
  5. Scoop batter into muffin tin, top with brown sugar and Bake on 425 for about 20-25 min
  6. Allow to cool before serving. Enjoy!
