Pumpkin Swirl Blondies

Ingredients
  

  • 1/2 cup butter unsalted, melted
  • 3/4 cup brown sugar
  • 1 egg room temp
  • 1 cup All purpose flour
  • 1 tbsp vanilla bean paste or vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Pumpkin Swirl

  • 1/4 cup Pumpkin puree
  • 2 tbsp syrup maple or butter flavored
  • 1 tbsp brown sugar
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • pinch of nutmeg

Instructions
 

  • Preheat oven to 350 degrees. Prep 9x9 baking pan with parchment or butter.
  • In a mixing bowl, combine melted butter, brown sugar, egg, vanilla bean paste and mix until combined.
  • In another bowl, combine flour, baking powder, salt, cinnamon and pumpkin pie spice. Mix. Then slowly fold in the dry ingredients to the wet ingredients. Mix until the batter is just combined.
  • Pour batter into a well buttered pan.
  • In a small bowl, combine pumpkin puree, syrup, 1/2 tsp of pumpkin pie spice, 1 tbsp of brown sugar, 1/4 tsp of cinnamon and a pinch of nutmeg. Mix until smooth. Add small scoops of pumpkin mixture to the top of the blondie batter. Use a knife or toothpick to create a swirl effect throughout the top layer.
  • Bake on 350 for 25-30 minutes. Remove from the oven allow blondies to cool for about 10-15 minutes. Enjoy!

Notes

Note - make sure to not over mix the batter. The more you mix, the more gluten is created. This will result in a dry, tough blondie. 
Do not over bake your blondie. Similar to cookies take them out when they are when they are just about done. roughly 25- 30 minutes. Golden around the edges and the top is nice and browned. It'll be somewhat soft in the center. They will continue to cook as the cool down.
