Bruschetta

- 1 Ciabatta loaf cut into 1/4 inch pieces
- 1 cup grape tomatoes diced
- 1/4 cup fresh basil
- 4 cloves garlic finely minced
- 2 tbsp extra virgin olive oil
- 2-3 tbsp Balsamic vinegar
- salt + pepper
- Italian seasoning
- mozzarella shredded, optional
Preheat oven to 400 degrees.
Cut ciabatta loaf into 1/4 inch pieces. Brush both sides with olive oil. Bake in the oven for about 6-8 minutes, or until golden brown. Flipping hallway through
Combine tomatoes (remove seeds/insides if desired), basil, garlic and add to a bowl. Add in olive oil and balsamic vinegar. Season with salt, pepper and Italian seasoning. Mix until well combined. Taste and adjust if needed.
Spoon tomatoes on the bread. Top with shredded mozzarella if desired. Serve immediately and enjoy.
