Creamy Tomato Spinach Pasta with Sausage

Ingredients
  

  • 8 oz penne or pasta of choice
  • 16 oz turkey sausage
  • 1-2 tbsp Pompeian Smooth Olive Oil
  • 1/4 cup yellow onion diced
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes
  • 3/4 cup chopped spinach
  • 1/4 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1 cup Italian mixed cheese or Parmesan
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes plus more for garnish, optional
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • Salt to taste

Instructions
 

  • Bring a large pot of salted water to a boil Cook pasta al dente about 9 minutes.
  • While the pasta cooks, add olive oil to a pan and brown the turkey sausage over medium heat until cooked through. Then remove from the pan.
  • Add more olive oil then pour in the cherry tomatoes and allow to sautè for a few minutes. Then add in diced onions and a pinch of salt. cook until fragrant, about 2 minutes before adding in the minced garlic and red pepper flakes. Add more olive oil if needed and allow the tomatoes to blister.
  • Using a spatula, lightly smash the tomatoes down. Then add in the seasonings to bloom for about 2 minutes. Carefully pour in chicken broth to deglaze the pan and heavy cream. Allow the sauce to thicken, then add in turkey sausage, chopped spinach and the cooked pasta.
  • Mix to coat the pasta using pasta water as needed to help the sauce. Sprinkle in Italian mixed cheese and mix to combine until melty and bubbly.
  • Finish with a little extra parmesan on top, then serve it up warm and enjoy every creamy, cozy bite.
