Instructions
Bring a large pot of salted water to a boil Cook pasta al dente about 9 minutes.
While the pasta cooks, add olive oil to a pan and brown the turkey sausage over medium heat until cooked through. Then remove from the pan.
Add more olive oil then pour in the cherry tomatoes and allow to sautè for a few minutes. Then add in diced onions and a pinch of salt. cook until fragrant, about 2 minutes before adding in the minced garlic and red pepper flakes. Add more olive oil if needed and allow the tomatoes to blister.
Using a spatula, lightly smash the tomatoes down. Then add in the seasonings to bloom for about 2 minutes. Carefully pour in chicken broth to deglaze the pan and heavy cream. Allow the sauce to thicken, then add in turkey sausage, chopped spinach and the cooked pasta.
Mix to coat the pasta using pasta water as needed to help the sauce. Sprinkle in Italian mixed cheese and mix to combine until melty and bubbly.
Finish with a little extra parmesan on top, then serve it up warm and enjoy every creamy, cozy bite.
