- 1/2 tsp white pepper
- 1/4 tsp salt
- 1/4 tsp smoked paprika optional
- 1 tsp baking soda
- 1-2 tbsp cornstarch
- 1 tsp neutral oil
- 1 tsp sesame oil
- 2 cloves minced garlic
For the sauce
In a small bowl, combine oyster sauce, dark and light soy sauce, fish sauce, brown sugar and chili garlic sauce. Mix until fully combined
For the beef
Cut sirloin into 1/4 strips. Season with white pepper, garlic powder, light soy sauce and cornstarch. Mix together, the batter will be a sticky texture.
Heat 1/2 cup of oil to a frying pan or wok over medium-high heat.
Add the beef to the hot oil. Fry untouched for 3-4 minutes. Once the edges begin to brown, flip and stir the beef vigorously for an additional 2 minutes. Using tongs or a slotted spoon remove the steak from the pan. Repeat for the next batch of beef.
Once all the beef is cooked, remove oil until you have about 1 tbsp of oil.
Reduce heat to medium, add in peppers and onions and sautè for about 3 minutes, then add in frozen garlic cubes, and frozen or fresh mango. Sautè for about 4-6 minutes, then add back in the beef.
Pour in the sauce and stir until everything is coated. Add chicken broth or beef broth to make it more saucy. Add in chili garlic paste and fresh Thai Basil .Allow the sauce to simmer until it thickens, about 4 minutes.
Serve stir fry over a bed of Jasmine rice. Add more Thai basil if desired. Enjoy!
