Equipment

  • Air Fryer or deep fryer

Ingredients

  • 1 pack frozen fries
  • 1 lb skirt or flank steak
  • 2 tbsp olive oil
  • ½ tbsp onion powder
  • ½ tbsp garlic powder
  • ½ tbsp chile powder
  • 1 tsp cumin
  • Salt + pepper
  • 1 lime juice
  • 4 cloves garlic minced
  • 1/2 yellow onion optional
  • handful of cilantro

Toppings for the fries

  • Ricos Condensed cheese sauce *see notes*
  • 1/4 cup colby jack cheese or Oaxaca cheese
  • pico de gallo
  • guacamole
  • sour cream
  • salsa verde
  • pickled jalapeños
  • pickled red onions

Instructions

  • In a large ziploc bag or bowl, add olive oil, onion powder, garlic powder, Chile powder, cumin, salt and pepper. Then add in cilantro, onion, lime juice and orange juice. Mix to combine then add in steak. Cover and allow to marinate overnight.
  • Preheat air fryer to 380 degrees. Cook according to package instructions shaking half way through. I cook mine for about 15 minutes.
  • Sear steak in a skillet for 3-4 minutes on each side or until your desired doneness. Remove from the pan and allow to rest for 10 minutes before cutting. Slice the steak then chop into pieces.

For the pico de gallo

  • In a bowl, dice Roma tomatoes, white onion, cilantro, the juice of 1 lime. Season with red pepper flakes, salt and pepper. Set aside
  • To Assemble the Fries: Spread the cooked French fries evenly on a sheet pan. Drizzle queso over the fries, then sprinkle shredded cheese and steak pieces on top. Place the pan in the oven and broil for 4-5 minutes, or until the cheese is melted and bubbly. Finish with pico de gallo, guacamole, sour cream, and salsa verde. Serve immediately and enjoy!
