Iced Blueberry Muffin Latte

Ingredients
  

  • 2 shots of espresso
  • 1/4 cup milk use more if needed
  • 2 tbsp Blueberry syrup *see notes*
  • 1 tbsp vanilla syrup optional
  • ice

Instructions
 

  • Add blueberry syrup to the bottom of a glass.
  • Add in ice, then milk and vanilla syrup. Carefully pour in the freshly brewed espresso. Mix and enjoy!

Notes

For Blueberry Syrup:
  1. In a saucepan, mix together:
    • 1 1/2 frozen blueberries
    • 1 cup water
    • 1 cup granulated sugar
    • 1 tsp of vanilla
  2. Cook the Syrup: Stir the mixture until well combined. Bring it to a boil over medium heat, then reduce the heat and let it simmer for about 5 minutes, or until the syrup has thickened slightly.
  3. Cool and Store: Remove from heat and let it cool. Transfer to a clean jar or bottle and store in the refrigerator for up to 2 weeks.
