Korean Inspired Ground Turkey Rice Bowl

Ingredients
  

  • 1 lb Ground turkey or chicken
  • 1/2 onion diced
  • 1-2 tsp olive oil
  • 2 cloves garlic grated
  • 1/2 tsp ginger grated
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 cup carrots
  • 1/4 cup green onions
  • salt + pepper to taste

For the sauce

  • 1/4 cup soy sauce
  • 1/4 cup chicken broth or water
  • 2 tbsp brown sugar or honey
  • 2 tbsp Sriracha or gochujong
  • 1 tsp rice vinegar
  • 1/2 tsp sesame oil
  • 1/2 tsp grated ginger or ground ginger
  • 1 tsp minced garlic
  • red pepper flakes

Bowl toppings

  • carrots shredded or shaved
  • cucumber diced
  • Sriracha Honey Roasted Broccoli
  • green onions
  • sesame seeds
  • cilantro

Instructions
 

  • In a bowl combine soy sauce, chicken broth, sriracha, honey, brown sugar, red chili flakes, grated ginger, garlic, rice vinegar, and sesame oil. Mix until combined. Then set a side.
  • Add olive oil to a skillet over medium high heat. Add in ground turkey and begin to brown. Season with onion powder, garlic powder and black pepper. Once it's almost browned add in onions, green onions and shredded carrots. Sautè until fragrant and softened about 4 minutes.
  • Pour in the sauce and toss until combined. Reduce the heat to low and allow the sauce to thicken slightly.
  • Serve over white rice or in lettuce wraps with your choice of toppings and enjoy!
