Clean and dry chicken. Season chicken with Italian dressing, garlic powder, onion powder, paprika, complete seasoning, salt and pepper. Mix until well combined.
To a sheet pan or oven-safe dish, add cubed sweet potatoes, red bell pepper, and onion. Drizzle with olive oil, then sprinkle with paprika, brown sugar, Italian seasoning, and red pepper flakes. Toss until the veggies are well coated. Place the marinated chicken on top.
Top with knobs of butter, about 1/2 tablespoon per piece of chicken. Add fresh thyme on top.
Place in the oven and bake. After 25 minutes, flip and baste the chicken. Continue baking for an additional 10-12 minutes.
Once done, remove from the oven. Let it rest for a few minutes before serving. Serve hot and enjoy your easy and flavorful One Pan Herb Roasted Chicken and Sweet Potatoes.
