One Pan Herb Roasted Chicken and Sweet Potatoes

Ingredients
  

For the chicken

  • 2 lbs chicken thighs
  • 1/4 cup Italian dressing
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Complete seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp Unsalted butter

For the dish

  • 2 sweet potatoes cubed
  • 1 red bell pepper chopped
  • 1/2 yellow onion chopped
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes
  • 1 tbsp brown sugar
  • 1-2 tbsp olive oil
  • 1/2 tsp Italian seasoning
  • 3 sprigs fresh tyme

Instructions
 

  • Preheat oven to 400 degrees.
  • Clean and dry chicken. Season chicken with Italian dressing, garlic powder, onion powder, paprika, complete seasoning, salt and pepper. Mix until well combined.
  • To a sheet pan or oven-safe dish, add cubed sweet potatoes, red bell pepper, and onion. Drizzle with olive oil, then sprinkle with paprika, brown sugar, Italian seasoning, and red pepper flakes. Toss until the veggies are well coated. Place the marinated chicken on top.
  • Top with knobs of butter, about 1/2 tablespoon per piece of chicken. Add fresh thyme on top.
  • Place in the oven and bake. After 25 minutes, flip and baste the chicken. Continue baking for an additional 10-12 minutes.
  • Once done, remove from the oven. Let it rest for a few minutes before serving. Serve hot and enjoy your easy and flavorful One Pan Herb Roasted Chicken and Sweet Potatoes.

Notes

bake for 35 minutes on 400 degrees. flip + baste the chicken after 25 minutes then cook for additional 10-12 minutes.
