Refreshing Blackberry Pine Mocktail

Ingredients
  

  • 3 oz Lyre's Cane Spirit
  • 1 1/2 oz Blackberry Thyme Syrup
  • 4 oz Pineapple Juice
  • 1 lime juice
  • San Pellegrino sparkling water
  • ice
  • mint + lime to garnish

Instructions
 

  • To a shaker combine Lyre's Cane Spirit, blackberry thyme syrup, lime juice and pineapple juice. Add ice and shake for 30 seconds.
  • Add ice to serving glasses, then evenly pour the mocktail into both glasses. Top with sparkling water, garnish with a mint sprig and lime wheel, and enjoy.

Notes

For the Blackberry Thyme Syrup
  1. In a saucepan, combine equal parts sugar and water. (I used 1/2 cup of granulated sugar and 1/2 cup water)
  2. Add 1/2-1 cup of fresh or frozen blackberries and 2 sprigs of thyme.
  3. Simmer the mixture over medium-high heat, stirring until the sugar dissolves completely, which usually takes about 10 minutes.
  4. After about 6 minutes, gently mash the blackberries to release their juices.
  5. Allow the mixture to simmer for the remaining 4 minutes.
  6. Turn off the heat and let the syrup sit for a bit to infuse.
  7. Finally, strain the syrup into a clean mason jar.
  8. Store the syrup in the refrigerator for up to 2 weeks.
