To a shaker combine Lyre's Cane Spirit, blackberry thyme syrup, lime juice and pineapple juice. Add ice and shake for 30 seconds.
Add ice to serving glasses, then evenly pour the mocktail into both glasses. Top with sparkling water, garnish with a mint sprig and lime wheel, and enjoy.

For the Blackberry Thyme Syrup
In a saucepan, combine equal parts sugar and water. (I used 1/2 cup of granulated sugar and 1/2 cup water)
Add 1/2-1 cup of fresh or frozen blackberries and 2 sprigs of thyme.
Simmer the mixture over medium-high heat, stirring until the sugar dissolves completely, which usually takes about 10 minutes.
After about 6 minutes, gently mash the blackberries to release their juices.
Allow the mixture to simmer for the remaining 4 minutes.
Turn off the heat and let the syrup sit for a bit to infuse.
Finally, strain the syrup into a clean mason jar.
Store the syrup in the refrigerator for up to 2 weeks.
