I don’t know about you, but there is something so nostalgic about eating a really good sandwich and your favorite chips. This Million Dollar BLT has become one of our favorites. Made with candied turkey bacon, creamy avocado slices, crisp lettuce, juicy heirloom tomatoes, and tangy pickled red onions, all drizzled with a creamy, spicy brown mustard sauce, nestled between two buttery, toasted brioche slices. Every bite is packed with flavor! This will quickly become your new favorite sandwich.

I love a good sandwich! Especially during the summer. As soon as the weather warms up, I’m in sandwich making mode.
I almost forgot how good a BLT can be. Since I stopped eating bacon, I haven’t eaten many BLT’s but recently I got inspired to remake one, but with Million Dollar turkey bacon.

What’s Million Dollar Bacon?
Million dollar bacon-also known as Millionaire bacon is the combination of brown sugar, cayenne pepper and black pepper. As if bacon wasn’t already good on it’s own, this sweet and spicy blend instantly elevates the bacon eating experience. It’s usually made on pork bacon, but since I don’t eat pork often, I decided to make it on turkey bacon. Now I know a lot of people feel turkey bacon is not the same, and it’s not but it’s still really good.
Adding the brown sugar blend elevates it even more.

Ingredients for Million Dollar BLT
- Bread: brioche bread because we’re grown! Feel free to use your favorite type of bread
- Butter: unsalted
- Lettuce: i used romaine. But feel free to use any type of green you’d like. Arugula, spinach or green leaf lettuce would work great.
- Tomato: I used heirloom tomatoes from my local grocer. Make sure to season the tomatoes. I used salt, pepper and a sprinkle of Italian seasoning.
- Pickled Red Onions: optional, butttt this is a Million Dollar BLT.
- Avocado: we’re making a Million Dollar BLT and avocados are very necessary!
For the Sauce
The sauce combines the following:
- mayo
- spicy brown mustard
- garlic powder
- lemon juice
- cajun seasoning.

Million Dollar BLT
Ingredients
- sliced brioche bread
- 1-2 tbsp unsalted butter
- lettuce
- tomato season with salt, pepper and Italian seasoning
- pickled red onions
- avocado slices
For the million dollar bacon
- Turkey bacon
- 2 tbsp Syrup
- 1/2 tsp black pepper
- 1-2 tbsp brown sugar
- red pepper flakes or cayenne pepper use to your discretion
For the sauce
- 1/4 cup mayonnaise or greek yogurt
- 2 tbsp spicy brown mustard
- 1/4 tsp paprika
- 1/4 tsp Cajun seasoning
- salt to taste
- 1/2 lemon juice
Instructions
- Preheat oven to 375 degrees and prep baking sheet with parchment paper
- Lay the bacon on a baking sheet or a wire rack. Spread syrup on both sides and season with black pepper, brown sugar, and red pepper flakes or cayenne. Bake in the oven for 15 minutes, flipping halfway through. Check periodically as you approach the 15-minute mark, and cook longer if needed.
- For the sauce combine mayo, spicy brown mustard, lemon juice, paprika, cajun seasoning and salt to taste. mix until combined. Taste and adjust if needed.
- Heat butter in a skillet over medium heat. Once it begins to bubble, toast both sides of the brioche for 3-4 minutes.
- To assemble, spread a layer of sauce on the un-toasted side of the bread. Then layer avocado slices, seasoned tomatoes, bacon, lettuce, pickled red onions, and more sauce on the other slice of bread.
- wrap in parchment paper and cut in half and enjoy! Serve with your favorite chips and drink.
