Wontons are small dumplings made with thin dough wrappers and typically filled with a variety of ingredients such as seasoned ground pork, shrimp, or vegetables. They’re a staple in Chinese cuisine and can be boiled, steamed, or fried, then served in soups, with dipping sauces, or as a crispy appetizer.

Ingredients for Red Curry Wonton Soup

Here’s what you’ll need:

  • frozen wontons: We’re working smarter not harder use your favorite frozen wontons. Here’s one of my favorite wontons.
  • red curry: Thai Red curry paste brings a incredible depth of flavor, a subtle spice and umami flavor.
  • coconut milk: this adds creaminess to the soup with a touch of sweetness.
  • fish sauce: optional. enhances the broth by bringing salty umami flavor.
  • soy sauce: this adds a touch of saltiness without using salt. I like using low sodium soy sauce.
  • chicken broth: provides a flavorful base for the soup.
  • garlic: the more the merrier to add a warm depth of flavor.
  • green onions: diced and added to the soup and for garnish for the perfect aromatic boost.
  • shallot: minced. Adds great flavor for the base of this soup.
  • red pepper: either Thai chili or red jalapeño will work.
  • cilantro: adds a great fresh flavor.
  • sugar: just a touch to help balance the heat. You can also use rice wine vinegar instead
  • lime juice: to add brightness to the soup and balance the flavors of the heat and saltiness.

Ingredients
  

  • mini wontons i used about 12
  • 1 1/2 cup chicken broth
  • 1/2 can coconut milk
  • 1/2 shallot minced
  • 1/2 red jalapeño diced
  • 1 tsp red curry paste
  • 1 tsp chili garlic oil
  • 1 tsp oil
  • 1-2 tsp light soy sauce season to taste
  • 1 tbsp brown sugar
  • 1-2 tsp chili garlic paste optional
  • lime juice optional

toppings

  • green onions
  • cilantro
  • fried onions
  • chili oil
  • cilantro

Instructions
 

  • Heat 1 teaspoon of oil in a saucepan over medium heat. Add shallots, red jalapeño, and the white parts of the green onions. Sauté for about 1 minute, or until fragrant. Stir in the red curry paste and chili oil, and cook for 2-3 minutes to enhance the flavors.
  • Pour in the coconut milk, chicken broth, soy sauce, brown sugar, and chili garlic paste. Stir well to combine and bring the mixture to a gentle simmer. Let it cook for 3-4 minutes to meld the flavors together.
  • Carefully add the mini wontons, ensuring they are fully submerged. Cover the saucepan and cook for 5 minutes, or until the wontons are heated through and tender. Finish by sprinkling the green parts of the green onions on top.
  • Ladle the soup into a bowl. Top with fresh cilantro, crispy fried onions, a drizzle of chili oil, and a squeeze of lime juice. Add a touch of Sriracha for an extra kick, if desired. Enjoy!
