In a skillet, heat up oil and sauté green onions over medium heat until fragrant. Lower the heat and stir in red curry paste until fragrant, about 3 minutes.
Add in coconut milk, chicken or vegetable stock, oyster sauce, dark and light soy sauce, fish sauce lime juice and brown sugar.
Next add in cilantro, basil, garlic, shallots and simmer on medium-low heat for about 5-6 minutes.
Taste and adjust if needed. Then add in ramen. allow the noodles to cook for 3-5 minutes or until tender.
Remove from heat, then serve additional green onions, cilantro, red pepper flakes and lime. Enjoy!
