If you don’t have an Instant Pot, you can easily make this dish in a regular pot. Here’s how:
- Start by browning the sausage in your pot.
- Add the chopped seasoning and sauté until fragrant.
- Stir in the rinsed beans and your smoked or boiled meats.
- Add all the remaining ingredients to the pot, mixing everything together thoroughly.
Bring the pot to a boil, then reduce the heat to medium-low. Cover and let it simmer for about 2 1/2 hours, or until the beans are tender. Be sure to check and stir occasionally to prevent the beans from sticking to the bottom. Add more liquid if needed during cooking.
Once the beans are tender, taste and adjust the salt and seasonings if necessary. Take 1 cup of beans out of the pot, mash them, and return them to the pot to help thicken the mixture. Simmer for an additional 30 minutes on low heat, and you’re done!
Season to taste. If you're cooking a small amount of beans, adjust accordingly.
Serve red beans in a bowl over white rice and garnish with green onions or parsley. Enjoy!
