In a mixing bowl, combine 3 cups of all purpose flour, yeast, sugar, salt, and cinnamon.
In a microwave safe bowl or measuring cup, warm milk and melted butter together in 20 sec increments until the butter is melted and the milk is warm (about 105–110°F) If you don't have a thermometer, it should feel comfortably warm to the touch, not hot
Add the warm milk, melted butter, and egg to the dry ingredients. Attach the dough hook and knead on low speed until combined, about 3 minutes. The dough will be sticky at this point
Scrape down the sides of the bowl, then gradually add the remaining 1 cup of flour, 1/4 cup at a time, for a total of 4 cups of flour. Continue kneading on low speed, then increase to medium speed and knead for 5–7 minutes, or until the dough is smooth and no longer sticks to the sides of the bowl.
Transfer the dough to a well oiled bowl and cover with saran wrap and a towel. Keep in a warm place to rise until it doubles in size. About 1 - 1 1/2 hr.
While the dough rises, prep the filling. Combine brown sugar, cinnamon and sweet potato butter. Mix until smooth.
Once the dough has risen, punch down the dough and roll out into a rectangle. Spread the sweet potato filling over the dough. Tightly roll the dough, pinching the edges together to seal, and place the roll seam-side down.
Trim the ends of the cinnamon roll to ensure even pieces, as the ends often have less filling. Cut the dough into 1 to 1 1/2 inch pieces using unflavored floss or a serrated knife. This recipe 10-12 cinnamon rolls, depending on your preferred thickness.
Place the cinnamon rolls into a 9×13 baking dish or a 9×9 baking dish lined with parchment paper. Cover and allow the cinnamon rolls to rise for an additional 30 minutes, or until doubled in size.
Preheat oven to 350°F. Once they rise, pour over warm heavy cream. Bake on 350°F for 30 minutes. Remove from the oven and allow to cool.
