For chicken thighs, season with olive oil, onion powder, garlic powder, balsalmic vinegar, salt, black pepper, and Italian seasoning. Allow to marinate for 15 minutes. Preheat air fryer to 400 degrees and cook chicken for 20-25 minutes flipping half way through. Once finished, chop chicken into pieces.
In a sauce pan bring water to a boil and boil eggs for 8 minutes. Remove from the pot and place into ice water immediately. After about a minute peel the shell off the eggs, rinse any remnants of the shell the chop the eggs.
To assemble the salad
To a large bowl add chopped spinach and romaine. Toss the greens in some ranch if desired. Arrange the chicken, boiled eggs, onions, tomatoes, bacon, apples, cucumbers on top. Add crumbled feta and more ranch and enjoy!
