There’s nothing like a quick and easy meal that’s simple to prepare, hearty and delicious. This One Pan Herb Roasted Chicken and Sweet Potatoes is the perfect weeknight meal. Truly a no-fuss dish that you need to add to your weekly lineup.
Juicy, roasted chicken thighs seasoned to perfection with sweet potatoes, bell peppers and onions. It gets no better or easier than this! Simple, high in protein, and perfect for meal prep.

- Super easy! As much as I love cooking, sometimes I just don’t feel like it. This dish is an easy, no-fuss meal that’s great for busy weeknights or when you don’t feel like cooking.
- Flavorful and delicious: Roasting the chicken on top of the sweet potatoes and veggies creates the perfect fusion of flavors.
- Healthy: I like to think this dish is pretty healthy. Get’s all your protein and veggies. You can also add more veggies if you’d like. Asparagus, brussel sprouts would work great!
Ingredients you’ll need for this Herb Roasted Chicken and Sweet Potatoes?
here’s what you’ll need to make this One Pan Herb Roasted Chicken and Sweet Potatoes:
- Chicken: I prefer using chicken thighs because they’re more flavorful and juicy.
- Sweet Potatoes: cubed. You can also use regular potatoes as well.
- Red Bell Pepper: cubed.
- Yellow Onion: Chopped. you can also use red onion.
- Italian dressing: the star of the show. One of my favorite ways to marinate chicken.
- Herbs & Spices: I used a variety of herbs and spices to flavor this dish. Pantry staples like onion powder, garlic powder, paprika, red pepper flakes, salt &pepper, etc. I also used fresh thyme.
- Olive Oil + Unsalted butter
- Brown Sugar: I added a touch of brown sugar to sweeten things up.


Optional tools:
Parchment Paper: I like to line my pan with parchment paper.
Meat Thermometer: To ensure that the chicken is cooked through and reaches an internal temperature of 165°F (75°C) for safe consumption.

Recipe Variations:
feel free to switch up this recipe with your own customizations. Here’s a few ideas:
- Add veggies like Brussels sprouts, asparagus, or even butternut squash for a fun fall twist. They would be a great addition to this recipe.
- Try it with salmon. Salmon will be perfect for this recipe. Just adjust the cook time to 20 minutes.

One Pan Herb Roasted Chicken and Sweet Potatoes
Ingredients
For the chicken
- 2 lbs chicken thighs
- 1/4 cup Italian dressing
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Complete seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp Unsalted butter
For the dish
- 2 sweet potatoes cubed
- 1 red bell pepper chopped
- 1/2 yellow onion chopped
- 1/2 tsp paprika
- 1/2 tsp red pepper flakes
- 1 tbsp brown sugar
- 1-2 tbsp olive oil
- 1/2 tsp Italian seasoning
- 3 sprigs fresh tyme
Instructions
- Preheat oven to 400 degrees.
- Clean and dry chicken. Season chicken with Italian dressing, garlic powder, onion powder, paprika, complete seasoning, salt and pepper. Mix until well combined.
- To a sheet pan or oven-safe dish, add cubed sweet potatoes, red bell pepper, and onion. Drizzle with olive oil, then sprinkle with paprika, brown sugar, Italian seasoning, and red pepper flakes. Toss until the veggies are well coated. Place the marinated chicken on top.
- Top with knobs of butter, about 1/2 tablespoon per piece of chicken. Add fresh thyme on top.
- Place in the oven and bake. After 25 minutes, flip and baste the chicken. Continue baking for an additional 10-12 minutes.
- Once done, remove from the oven. Let it rest for a few minutes before serving. Serve hot and enjoy your easy and flavorful One Pan Herb Roasted Chicken and Sweet Potatoes.
