But today I’m back—borrowing my hubby’s computer—because the content must go on. I missed y’all! Hoping to get a new setup soon, but in the meantime… let’s make something delicious.

  1. I toasted mine in a dry skillet over medium heat, stirring frequently until the shredded coconut turned golden brown—about 5–7 minutes.
  2. Then, I added water to deglaze the pan and stirred in both brown and granulated sugar. Bring the mixture to a gentle boil, then reduce the heat to medium-low. Let it simmer until the sugars dissolve and the syrup thickens slightly, stirring occasionally.
  3. Remove from heat, stir in vanilla bean paste (or extract) and a pinch of salt. Let it cool.
  4. Once cooled, strain the syrup into a mason jar or dispenser bottle. Don’t forget to press the coconut to squeeze out every drop of flavor!

Ingredients
  

  • 7 oz sweetened shredded coconut
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 1/2 cup water
  • pinch of salt
  • 1 tbsp vanilla extract or paste

Instructions
 

  • Add shredded coconut to a dry pan over medium heat. Toast, stirring frequently, until it turns golden to medium brown.
  • Gently pour in water to deglaze the pan, be sure to scrap the bottom. Then add in both sugars and a pinch of salt stirring until the sugar dissolves. Bring the water to a gentle boil then reduce to a simmer for about 10 minutes.
  • Remove from the heat and allow the syrup to cool. Then strain into a measuring cup. Stir in the vanilla bean paste or extract and mix to combine. Carefully pour the strained syrup into a glass dispenser.
  • Store in the refrigerator for up to 2 weeks.
