Creamy Rotel Shrimp Pasta! Penne Pasta tossed in the most delicious cajun cream sauce! The star of the show, spicy Rotel tomatoes, adding just the right amount of zing to elevate each bite. Crafted with pantry staples, it’s the perfect solution for busy weeknights when time is short but cravings are high.

Y’all know pasta is my go-to for a quick and delicious meal it’s literally one meal I can make with my eyes closed. haha! And the best way to make use of what I have on hand at an affordable rate.

Rotel makes the perfect base for this delicious creamy pasta.

What’s Rotel?

Rotel is a brand that produces canned diced tomatoes. Accompanied by green chilies and comes in different temperatures. Mild, medium, fiery etc. They are mostly known popular ingredient in the infamous Rotel Dip or Texas Nachos. Or if you’re like my brother “ugly nachos”.

Ingredients For Rotel Shrimp Pasta

Shrimp: large or jumbo sized shrimp. Peeled and deveined.
Pasta: Penne Pasta was used for this recipe. Feel free to use any pasta you prefer.
Butter: unsalted.
Aromatics: I added onion and garlic to the pasta but feel free to leave out.
Rotel: I used spicy canned tomatoes, because that’s what I had on hand. Feel free to use grape tomatoes.

Extra Virgin Olive Oil: I recommend using Graza.
Green Onions: The perfect garnish.
Parmesan Cheese: freshly grated.
Seasonings: I used pantry staples. Cajun seasoning, onion powder, garlic powder, cayenne pepper.

How to make?

This pasta is very simple to make-

  1. Cook the Pasta: Boil the linguine in salted water according to the package instructions for al dente.
  2. Prepare the Protein: Season the shrimp with olive oil, onion powder, garlic powder, black pepper and Tony’s. Mix until coated. Sear the shrimp until it’s almost cooked. Remove from the pan.
  3. Make the Sauce: In the same pan, add butter and oil. Add in onions and red pepper flakes. Sautè until fragrant. Then add in garlic, sauteing an additional 2 minutes. Add Rotel tomatoes and a pinch of salt. Let the tomatoes simmer until they cook down. Next, pour in heavy cream, then season the sauce with onion powder, garlic powder, Complete seasoning, black pepper, & Tony’s. Add Parmesan cheese and mix on low until melted and incorporated into the sauce.
  4. Serve: Toss the pasta in the sauce, adding pasta water to loosen and get the sauce to stick. Add back in the shrimp. Garnish with green onions, and lightly sprinkle with Tony’s, if desired. Serve warm and enjoy!

Ingredients
  

For the shrimp

  • 1/2 box shrimp
  • 1 tbsp olive oil
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tsp Tony's seasoning

For the pasta

  • 1/2-1 pack penne pasta
  • 1 1/2 cup heavy cream
  • 3 cloves garlic minced
  • 1/2 onion diced
  • 1/3 cup pasta water
  • 1/4 tsp red pepper flakes use to your discretion
  • 1/2 can medium rotel tomatoes
  • 1/4 cup green onions
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp Complete seasoning
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • Tony's Seasoning use to your discretion

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta al dente, about 8 minutes.
  • Season shrimp with olive oil, onion powder, garlic powder, black pepper and and Tony's seasoning.
  • In a large skillet over medium heat, sear shrimp on both sides until cooked. 2-3 minutes on both sides depending on the size of shrimp. Remove from the pan.
  • Add butter and to the same pan, then add in onions and red pepper flakes and sautè until fragrant. Next add in minced garlic. Sautè an additional 2 minutes.
  • Add in rotel tomatoes and cook down for about 5 minutes. Stir in heavy cream. Once it comes to a low simmer. Reduce the heat, season with onion powder, garlic powder, black pepper, and Complete seasoning. Mix until combined. Then add in grated parmesan cheese. Stir until smooth.
  • Add in pasta and mix until fully coated. Add pasta water to help the pasta sauce to combine. Add the shrimp back. Top with green onions. Sprinkle with Tony's and grated parmesan if desired. Serve warm and enjoy!
