What you’ll need:
Here’s what you’ll need to make this delicious creamy tomato sausage pasta:
Penne: or your pasta of choice
Turkey sausage
Cherry Tomatoes
Olive Oil: A high quality olive oil really makes a difference here.
Yellow onions: (or shallots)
Spinach: chopped.
Garlic: the more the better
Spices: garlic powder, Italian seasoning, red pepper flakes, smoked paprika
Cheese: Italian mixed cheese or parmesan cheese
Pasta water: always reserve pasta water when making pasta. It helps the sauce cling to the pasta.

Best pasta to use?
I love short pastas like penne or rigatoni because they hold onto the creamy sauce, but longer shapes like fettuccine or linguine work too. If you go with long pasta, add a touch more heavy cream and use tongs to toss so every strand gets coated.

Creamy Tomato Spinach Pasta with Sausage
Ingredients
- 8 oz penne or pasta of choice
- 16 oz turkey sausage
- 1-2 tbsp Pompeian Smooth Olive Oil
- 1/4 cup yellow onion diced
- 3 cloves garlic minced
- 1 cup cherry tomatoes
- 3/4 cup chopped spinach
- 1/4 cup chicken broth
- 1 1/2 cups heavy cream
- 1 cup Italian mixed cheese or Parmesan
- 1 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/2 tsp red pepper flakes plus more for garnish, optional
- 1/4 tsp smoked paprika
- 1/4 tsp black pepper
- Salt to taste
Instructions
- Bring a large pot of salted water to a boil Cook pasta al dente about 9 minutes.
- While the pasta cooks, add olive oil to a pan and brown the turkey sausage over medium heat until cooked through. Then remove from the pan.
- Add more olive oil then pour in the cherry tomatoes and allow to sautè for a few minutes. Then add in diced onions and a pinch of salt. cook until fragrant, about 2 minutes before adding in the minced garlic and red pepper flakes. Add more olive oil if needed and allow the tomatoes to blister.
- Using a spatula, lightly smash the tomatoes down. Then add in the seasonings to bloom for about 2 minutes. Carefully pour in chicken broth to deglaze the pan and heavy cream. Allow the sauce to thicken, then add in turkey sausage, chopped spinach and the cooked pasta.
- Mix to coat the pasta using pasta water as needed to help the sauce. Sprinkle in Italian mixed cheese and mix to combine until melty and bubbly.
- Finish with a little extra parmesan on top, then serve it up warm and enjoy every creamy, cozy bite.
