Spring Cocktails: Grilled Pineapple Miso Margarita
Sun’s out, bun’s out… well, almost. With warmer weather on the horizon, and Cinco de Mayo right around the corner, what better way to celebrate than with a fresh, vibrant cocktail in hand? This Grilled Pineapple Miso Margarita is tropical, savory-sweet, and just the kind of refreshing sip you’ll want in your hand all spring and summer.
Spring has slowly become one of my favorite seasons. To me, it’s a reminder of hope. Even when it rains or feels moody, there’s still something to look forward to. Although it’s a rainy day here in Houston, I’m channeling summer vibes with this unique and delicious cocktail.

What is Miso?
Miso paste is a fermented soybean paste known for its bold, salty flavor and is a staple in many Asian dishes. In this cocktail, we created a miso syrup by combining miso with simple syrup. Creating the perfect balance of savory and sweet.
It pairs perfectly with the grilled pineapple making this cocktail well rounded and delicious cocktail.

What you’ll need for this Grilled Pineapple Miso Margarita?
- Grilled Pineapple: chopped. You can achieve this stovetop or on the grill.
- Miso Syrup: combination of simple syrup and miso paste.
- Tequila: use your favorite brand of Tequila.
- Cointreau: or your favorite brand of orange liqueur.
- Lime: None of that fake stuff. Fresh is best.
- Soda Water: or club soda
- Mint: for garnish, optional.
- Tajìn: optional, used to rim the glass.

- Slice pineapple into rings or spears before grilling
- Use a grill pan or cast iron skillet if you’re indoors.
- Look for caramelization—those golden brown edges = flavor

Grilled Pineapple Miso Margarita
Equipment
- cocktail shaker
Ingredients
- 3-4 grilled pineapples
- 2.5 oz Tequila
- 3 oz pineapple juice
- .5 oz miso syrup
- .5 oz Cointreau
- the juice of 1 lime
- soda water or club soda optional
For garnish
- lime wheel
- lime juice
- Tajìn
Instructions
- Miso Syrup: In a saucepan, combine 1 cup water and 1 cup sugar over medium heat, stirring until dissolved. While still warm, pour about 6 oz into a separate jar and stir in 1 tsp miso paste until smooth. Let cool, then store both syrups in the fridge—use the miso syrup for this cocktail and the remaining simple syrup for other drinks.
- Heat a cast iron skillet over medium-high heat. Add chopped pineapple chunks and sear until golden brown—about 5 minutes per side. Remove from heat and let cool.
- Add grilled pineapple to a cocktail shaker and muddle. Then pour in pineapple juice, tequila, lime juice, Cointreau, and your miso syrup. Add a few ice cubes and shake until the shaker feels cold.
- Run a lime wedge around the rim of your glass and dip it in Tajín. Using a mesh strainer, strain the cocktail into the glass. Top with soda water if desired
- Garnish with a lime wheel (or a pineapple wedge!) and enjoy the perfect balance of smoky, sweet, and savory.
