Easy Spicy Shrimp Hand Rolls
Spicy Shrimp Hand Rolls. The perfect recipe when you’re craving sushi without the work. These hand rolls feature spicy shrimp mix, seasoned sushi rice, crisp cucumber, green onions and creamy avocado, all wrapped in seaweed. Drizzled with spicy mayo, eel sauce and lots of sriracha! These are the perfect hand snack. Literally perfection!

You guys know my obsession for sushi runs deep! I was violently craving sushi the other day and as the responsible adult that I am, I decided to make it at home. But the easy way. Hand rolls.
These are super easy to make. If you are intimidated by sushi making with a mat these Spicy Shrimp Hand Rolls are for you. Inspired by my Spicy Shrimp Sushi Roll these are delicious and made easy not having to deal the equipment or making sure it’s rolled perfectly.

What Are Hand Rolls?
Hand rolls offer a simpler method of making sushi without the need for special equipment. With hand rolls, you wrap all the ingredients in a nori sheet and enjoy it by hand, no utensils required.
On the other hand, traditional sushi rolls, or maki, involve layering ingredients and rolling them tightly using a sushi mat until sealed. These rolls are typically cut into smaller, bite-sized pieces for serving.

Ingredients for Spicy Shrimp Hand Rolls
- Sushi rice: short grain rice with a sticky texture when it’s cooked.
- Nori: Be sure to get the full sheets. Not snack nori. Here’s the link to the one I used.
- Rice vinegar: used to season the rice. Gives it that sushi taste. This is the brand I used.
- Shrimp: I used medium sized shrimp, chopped into pieces.
- Cucumber: deseeded and cut into thin strips.
- Avocado: thinly sliced.
- Green onions: Love adding to the shrimp mix and to garnish.
- Panko: adds great texture, and holds the shrimp mix together.
- Sugar & Salt: use this to season the rice.
- Mayo: I love using Kewpie mayo or Spicy Mayo for my Asian inspired recipes.
- Sriracha: bring on the heat!
- Soy sauce: I recommend using low sodium soy sauce. You can use coconut aminos as an alternative.
How To Make The Spicy Shrimp?
Spicy shrimp is very easy to make. All you need is cooked shrimp, Kewpie mayo or Spicy Mayo, panko, Sriracha, sesame oil, green onions, and soy sauce. Mix everything together until well combined. If you’re feeling adventurous, you can add a little cajun seasoning for some extra pizzazz.
Feel free to use any fish with this combination. Tuna, shrimp, salmon. The options are endless.
Hand Roll Tips
- Cut Nori Sheets in Half: This step makes it easier to handle and roll the hand rolls.
- Rice Prep: Make sure to use sushi rice and that your rice is not wet. It needs to be cooked through and sticky.
- Preparation is Key: Have all your ingredients ready and easily accessible before you start assembling your hand rolls. This includes your sushi rice, nori sheets, fillings, and any condiments you’ll be using.
- Use Fresh Ingredients: Opt for fresh, high-quality ingredients for the best flavor and texture in your hand rolls.
- Proper Rice Distribution: Spread a thin layer of sushi rice evenly across the half the nori sheet, leaving a small border around the edges to make rolling easier.
- Don’t Overfill: Be mindful not to overfill your hand rolls, as this can make them difficult to roll and eat. Aim for a moderate amount of filling.
- To Seal: Use a few pieces of rice to seal the roll.
- Roll Firmly: When rolling the hand roll, use gentle but firm pressure to ensure that it holds its shape. Roll it tightly but not too tight to avoid squishing the filling.
- Shape it Well: Shape the hand roll into a cone shape, by tucking in the end to secure it. This helps prevent the filling from falling out and gives it a neat appearance.
- Serve Immediately: Hand rolls are best enjoyed fresh, so serve them immediately after assembling to prevent the nori from becoming soggy.
- Practice Makes Perfect: Like any sushi-making technique, making hand rolls takes practice. Don’t be discouraged if your first few attempts aren’t perfect.

Spicy Shrimp Hand Rolls
Ingredients
- 1 cup sushi rice
- 1 cup water
- 1 tbsp rice vinegar
- 1 tsp granulated sugar
- 1/2 tsp salt
For the shrimp
- 1/2 lbs shrimp
- 1 tsp light soy sauce
- 1/2 tsp garlic powder
- 1/2 tsp white pepper
- 2 tbsp spicy mayo
- 1/4 cup green onions
- 1 tbsp light soy sauce
For the hand roll
- Nori sheets halved
- 1 avocado sliced
- cucumber julienned
- green onions diced
- eel sauce
- sesame seeds optional
- Sriracha
- Spicy Mayo
Instructions
For the sushi rice
- Wash rice until the water runs clear. Add equal parts water and rice to a saucepan or rice cooker. If cooking over the stove, bring to a boil and reduce to low. Cover and allow to cook for 20 minutes.
- Once cooled, season the rice with rice vinegar, sugar and salt. Mix well and set aside.
For the shrimp
- Season shrimp with garlic powder, white pepper and a little soy sauce.
- Sear the shrimp in a hot pan for 2-3 minutes on both sides. Remove from the pan and chop into pieces.
- To a bowl, add the chopped shrimp, sriracha, spicy mayo, soy sauce and green onions. Mix until combined.
For the hand rolls
- Cut nori in half and place rough side up. Add 1-2 spoonfuls of cooked sushi rice to the top half corner of the nori sheet. Place the spicy shrimp mix, 2 avocado slices, and cucumber slices in the middle of the rice at an angle.
- Pull the filled corner towards the middle making sure the filling ingredients stay in place. Then use the other hand to pull the other corner. Wrap the nori until there's no more to wrap it should make a cone shape. Use a few pieces of rice in the corner to seal the hand roll.
- Drizzle eel sauce, spicy mayo, Sriracha. And garnish with green onions and sesame seeds.
- Serve immediately and enjoy!
