It’s officially holiday season. And that means.. the kids are home and so are you. If you’re in need of a pick me up this morning, try my boozy iced coffee. It’s the perfect “I’m on vacation” cocktail. Made with homemade vanilla Vodka and cinnamon syrup. Combined with your favorite cold brew, coffee creamer, and a splash Rumchata. Nothing gets better than this.

The holidays call for some adult libations. and this iced coffee should be on top of your list. It’s so good. With notes of vanilla, cinnamon a hint of Rum. The perfect trio for a delicious and cozy holiday cocktail.


I’ve tried my share of spiked coffee drinks and none have impressed me like this one. Most of them are WAY too strong. And maybe that’s the point of spiked coffee… but if I’m spiking something, I’d like to enjoy it. This iced coffee has the perfect balance of creaminess, sweetness, & alcohol.
How to Make Boozy Iced Coffee
This recipe is made up of 4 components. The vanilla Vodka, cinnamon syrup, cold brew and milk. Here’s the details.
What’s Rumchata?
Rumchata is a liqueur made with Caribbean rum, cream and has notes of cinnamon and vanilla. So with that being said you can see how the flavors would compliment an iced coffee especially for the fall and winter.
In college some of my friends and I would go to Dunkin Donuts for their happy hour special. 1 large drink for like $1-2. One of my friends put me on to adding Rumchata to our iced coffee and babyyyyy I was forever changed lol. The cinnamon-vanilla flavored cream was the perfect addition to an iced coffee. It’s so good. And I know I know, you hear rum and immediately think, is it strong? Not at all. The cinnamon and vanilla notes cancel out most of the rum flavor.
Homemade Vanilla Vodka
Earlier this season, I made vanilla Vodka. A lot of the cocktails I wanted to create called for it so I decided to just make it myself by slicing a vanilla bean in half, and submerging it in vodka. Kept it in a dark and cool place, and every few days shook it up to combine everything. And that’s all there is to it. Super easy!
Cinnamon Syrup
I also added cinnamon syrup to the cocktail. This is super simple to make and great to use for cocktails, mocktails and desserts throughout the holiday season. Simply muddle cinnamon sticks and add them to a sauce pan with equal parts sugar and water. Bring to a low boil, stirring until the sugar has dissolved. Then reduce the heat and simmer for about 8-10 minutes. Strain the liquid into glass jar and store in the refrigerator. This is great for coffee in the morning, tea, desserts and cocktails of course.

Make it 2 Ways
Method 1– You can freeze your cold brew/iced coffee into ice cubes, then pour all the ingredients into your glass. The bigger the ice cubes, the slower the melt. This way prevents your iced coffee from getting watery.
Method 2– Combine all the ingredients + ice into a glass. Mix well and enjoy.
Can I make without Vanilla Vodka?
Of course! It’s still considered “boozy” iced coffee without the vanilla vodka. The Rumchata and coffee are a great duo. It’s actually my favorite way to make a “boozy” iced coffee. The vanilla Vodka is extra razzle dazzle.

Mrs. Claus Boozy Iced Coffee
Ingredients
Cinnamon Syrup
- 1 cup sugar
- 1 cup water
- 3 cinnamon sticks muddled
Homemade Vodka
- 1 vanilla bean stem
- Vodka
Mrs. Claus Boozy Iced Coffee
- Cold Brew
- 1 oz vanilla vodka
- 1.5 oz rumchata
- 2 oz milk of choice/ coffee creamer I used almond milk
- 1 tbsp cinnamon syrup
- Ice
Topping
- whipped cream
- ground cinnamon
Instructions
- To make the cinnamon syrup. Add 3 cinnamon sticks and muddle in a small bowl (crushing them up) Add to a medium pot. Add 1 cup water and 1 cup sugar to a boil. Once at a boil, reduce heat and allow to simmer on low for 8-10 minutes. Once cooled, strain syrup into a jar.
- To a glass, combine ice, cold brew coffee, vanilla Vodka, Rumchata, milk or creamer of choice and cinnamon syrup. Mix until combined. Top with whipped cream and cinnamon.
