Crispy potatoes sautéed in a medley of peppers and onions, smoked sausage, seasoned to perfection. Then topped with shredded cheese. They’re so good and packed with so much flavor. Perfect potatoes to enjoy during the weekend.

Easy Crispy Skillet Breakfast Potatoes Recipe



There’s something about crispy breakfast potatoes that make my day. Potatoes cooked until golden, crisp perfection. Sautéed with peppers and onions, smoked sausage, and topped with shredded cheese. These seasoned spuds are flavor-packed and the ultimate weekend treat!

Ingredients for breakfast potatoes

  • Red potatoes- diced. I used what I had on hand but you can also use any potato you like. Russet, Yukon, yellow potatoes will also work great, if you prefer.
  • Peppers- I made this O’Brien style to add a little color to these skillet breakfast potatoes. a little red pepper, green bell pepper and onion.
  • Oil- use a good quality oil with a high smoke point. Grapeseed oil or Canola.
  • Smoked sausage- I used smoked sausage links from HEB. But feel free to use bacon or ground sausage.
  • salt

  • Seasonings- I used a variety of seasonings to spice these breakfast potatoes up. All kitchen staples. To limit the amount of salt, I also used Tony’s lite creole seasoning blend
  • Cheese- for this recipe I used shredded Colby jack cheese. You can use your favorite cheese or opt out the cheese if desired.

How to make the BEST Crispy Breakfast Potatoes

The recipe starts by bringing a pot of salted water to a boil. Clean and dice the potatoes into cubes. Then add them to the boiling water and cook for about 5 minutes.

While the potatoes boil, cook the smoked sausage until brown. Remove from the pan, then add in oil to the rendered fat over medium high heat. Strain the potatoes then add to the skillet and cook for 5 minutes without touching them.

Next, toss the potatoes to flip and allow them to continue cooking for another 5 minutes. Keep moving the potatoes as needed until you get the color and crispy texture you desire.

Make a well in the skillet then add in red bell peppers and chopped seasoning. Toss the potatoes together then add back in the cooked sausage. Give everything one good toss and finish the potatoes with some shredded cheese. Add the top to the pan and allow the cheese to melt.

Top with some chives or green onions if desired and serve warm with ketchup. Serve these delicious breakfast potatoes for a Saturday or Sunday brunch. I promise you won’t be disappointed.

How long do these crispy breakfast potatoes take?

It’ll take about 30 minutes to get these delicious crispy breakfast potatoes on the table. Parboiling them in salted water helps cook them faster.

Ingredients
  

  • 4-5 Red potatoes cubed
  • 3 tbsp chopped seasoning (bell pepper, onions and celery)
  • ½ red pepper chopped
  • 1/2 onions optional, chopped
  • 1/3 cup canola oil for frying
  • Smoked sausage half moons
  • 1/2 tbsp Onion powder
  • 1 tsp Tony’s Lite seasoning
  • 1/2 tbsp Garlic powder
  • 1 tsp Garlic pepper
  • 1/2 tsp Parsley
  • 1/2 tsp Smoked paprika
  • salt
  • 1/2 cup shredded Colby jack cheese

Instructions
 

  • Bring a pot of salted water to a boil. Clean and dice potatoes into squares. (peel if desired). Boil the potatoes for about 5 minutes before straining them.
  • In a large skillet, cook smoked sausage until brown. Remove from the pan. Add canola oil to the rendered fat then add in the potatoes. Fry untouched for about 5-7 minutes then flip and toss with a spatula. Continue cooking the potatoes until they are crispy.
  • When they are cooked to your desired doneness, make a well in the middle of the pan, and add in red peppers, onions and chopped seasoning. Toss everything together and season with onion powder, garlic pepper, Tony's lite seasoning, and smoked paprika. Taste and adjust seasonings if needed.
  • Add the cooked sausage back to the pan and toss everything together. Reduce heat and top potatoes with shredded Colby jack cheese. Cover the pan with a top to allow the cheese to melt.
  • Top with parsley and serve warm.
