What is Parchment Baked Fish?
Parchment baked fish also known as fish en papillote is a cooking method where seasoned fish and veggies are wrapped in parchment paper ‘envelope’ and placed in the oven. The magic happens when the steam generated by the enclosed packet cooks the fish and veggies to perfection. This is such an effortless yet impressive cooking technique that comes together in about 25 minutes and makes cleanup a breeze.

This cooking technique has become one of my favorite ways to cook fish. I make it at least once a week. Your choice of fish seasoned to perfection. All steamed together with your favorite vegetables. It doesn’t get much easier than this. If you’re a fan of one pot meals, or simple, no-fuss meals then you’re going to love this easy parchment baked fish.
How to make it
This deliciously easy fish dinner comes together in about 25 minutes.
- Add pieces of fish to large pieces of parchment paper.
- Place diagonally so when folded the paper creates a triangle.
- Add a drizzle of olive oil, salt, pepper onion powder, garlic powder, and citrus garlic seasoning and smoked paprika to both sides of the fish.
- Add 2 slices of lemon on top of the fish, a thyme sprig and two tsp of butter.
- Add green beans and grape tomatoes around the fish. Then add more olive oil and lightly season the green beans.
- Bring the parchment paper together then twist and tuck together. Add to a 400 degree oven and bake for 20-25 minutes, or until the fish and vegetables are flaky and tender.
What kind of fish should I use?
I’ve used this technique to make Swai, Steelhead trout, Branzino, and seabass. So feel free to use your favorite type of fish. Season to your liking and throw your favorite bright veggies and citrus in.

What you’ll need
- Fish- your choice of fish. I used Swai for this recipe.
- Lemon- thinly sliced. Citrus adds brightness to the fish.
- Red onion or shallots- thinly sliced.
- Citrus garlic seasoning – one of my favorite seasonings for fish.
- Onion Powder
- Garlic Powder
- Smoked Paprika
- Salt & Pepper
- Grape Tomatoes- sliced in half.
- Green beans- fresh or frozen.
- Sun dried tomatoes– optional. But I love the flavor this adds.
- Unsalted butter
- Olive oil

Easy 20 Minute Parchment Baked Fish
Equipment
- Parchment Paper
Ingredients
- 2 Filets of Swai
- 1 cup green beans frozen or fresh
- 1/3 cup grape tomatoes halved
- 1/2 lemon thinly sliced
- 1/2 red onion or shallot thinly sliced
- 1/2 tsp citrus garlic seasoning or All Purpose Seasoning
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/8 tsp smoked paprika
- 1-2 tbsp olive oil
- salt + black pepper
- 2 tsp unsalted butter
Instructions
- Preheat oven to 400 degrees F
- To parchment paper, place fish filet diagonally (so when folded the paper creates a triangle.)
- Add a drizzle of olive oil, salt, pepper, onion powder, garlic powder, citrus garlic seasoning, and smoked paprika to both sides of the fish.
- Add green beans under and around the fish. Then sprinkle thinly sliced red onion or shallot, halved grape tomatoes over the fish.
- If using frozen green beans, you can add them directly. If using fresh green beans, you may want to blanch them quickly in boiling water for a few minutes to partially cook them before adding them to the parchment.
- Drizzle a little more olive oil over the vegetables and lightly season them with salt and black pepper, all purpose seasoning and garlic powder.
- Bring the edges of the parchment paper together by twisting the ends, creating a sealed pocket around the fish and vegetables. Make sure the pocket is tightly sealed to trap the steam inside.
- Place the parchment packet on a baking pan and transfer it to the preheated oven.
- Bake for 20-25 minutes, or until the fish is flaky and the vegetables are tender. Cooking times may vary slightly depending on the thickness of the fish filets.
- Once cooked, carefully cut open or unwrap the parchment paper packet. Serve the fish with the vegetables and enjoy!
