The BEST Chimichurri Sauce
This bright and fresh Chimichurri sauce is the combination of fresh herbs and spices in an olive oil and red wine vinegar bath. It’s the best way to instantly elevate a meat dish. Boasting a burst of freshness and flavor that screams summer. Best enjoyed drizzled over grilled meats for an ultimate burst of flavor.

What is Chimichurri Sauce?
Chimichurri is a sauce/ marinade that originated in Southern America, Argentina to be specific. It’s usually served with grilled meats. Classic Chimichurri includes parsley, garlic, chilies, oregano, red pepper flakes, red wine vinegar and olive oil. It’s quick and instantly elevates what it’s served with.
I remember the first time I had Chimichurri sauce in Isla Mujeres Mexico. When I tell you that was the best steak I’ve ever had. Such a simple sauce, but bursting with flavor. I think about that chimichurri sauce often ahah. I need to make a trip back.

Ingredients for my Chimichurri Sauce?
- Parsley: flat leaf parsley is traditionally used.
- Shallots: finely minced.
- Garlic: the more the better. Finely minced.
- Chillies: Fresno peppers or Red jalapeno. You can also use red pepper flakes
- Basil: not traditional but this added a banging flavor to my chimichurri.
- Salt + Pepper
- Olive Oil: be sure to use a good quality EVOO. Here’s my favorite!
- Red Wine Vinegar: This adds the perfect amount of sweet and tanginess
- Balsamic Vinegar: optional. Not traditional. I’m a huge fan, and this elevated my chimichurri
How to make Chimichurri Sauce?
Making chimichurri is super easy. I’ve seen a number of ways but my favorite is to finely chop all the ingredients and combine in a bowl. You can also add them to a food processor to speed things up.

What to Serve Chimichurri Sauce On?
Literally everything. You can put it on an ashy finger and it’ll taste good. haha jk jk! It might.
Serve chimmichurri sauce with a variety of grilled meats. But don’t limit it to just grilled meats, easily elevate dinner with this fun and vibrant sauce. It will elevate even the simplest of dishes.

Chimichurri Sauce
Ingredients
- 1/3 cup parsley
- 4 basil leaves finely chopped
- 1 shallot clove minced
- 4 cloves garlic minced
- 1 red jalapeño or fresno chili finely diced
- red pepper flakes optional, use to your discretion
- 1 tsp fresh oregano
- 1/2 cup Extra virgin olive oil use more if needed
- 1-2 tbsp Red wine vinegar
- salt + pepper
Instructions
- Combine the ingredients in a large bowl, mixing well, and season to taste. Cover and let marinate for a few hours before serving for the best flavor.
