This Ultimate Cobb Salad is the perfect meal when you’re short on time and want something quick and equally delicious. Juicy grilled chicken, crispy turkey bacon, fresh greens, sweet grape tomatoes, tangy red onion, crunchy cucumbers, boiled eggs, and a pop of sweetness from apples—all tossed together with creamy ranch dressing. That was a mouthful, and if your mouth didn’t water a bit while reading that… wellll IDK friend.
So my boyfriend is on a diet, and wants to incorporate more healthy recipes. And I really didn’t have the energy this day, so I decided to take the leftover grilled chicken we had and make a cobb salad. We’ve been juicing lately so we had a lot of veggies on hand and it was perfect quick meal!
When I think of a really good salad it needs to have a few components. I need it to be flavorful, good textures, like crunch, a little spice and a touch of sweetness. So that’s what I consider when putting this together. I used what I had on hand, so feel free to do the same.

Ingredients to Make The Ultimate Cobb Salad
- Romaine
- Spinach
- Grape Tomatoes
- Grilled Chicken
- Bacon
- Feta Cheese
- Ranch
- Red Onions
- Boiled Eggs
- Apples
What Dressing to Pair This With?
I paired this salad with this Ranch dressing I got from Sam’s Club. But you can use what ever preferred dressing you’d like.
If you’re feeling extra adventurous you can make the Ranch Dressing from scratch. My creamy avocado garlic sauce would be a great dressing for this salad as well.

Ultimate Cobb Salad
Ingredients
- Spinach chopped
- Romaine chopped
- 2 chicken thighs grilled or rotisserie chicken
- 4 strips Turkey Bacon diced
- 1/2 Fuji apple chopped
- 1/4 red onion diced
- 1/2 cucumber diced
- 3 eggs boiled
- 1/3 cup cherry tomatoes halved
- 1/3 cup crumbled Feta cheese
Instructions
- For chicken thighs, season with olive oil, onion powder, garlic powder, balsalmic vinegar, salt, black pepper, and Italian seasoning. Allow to marinate for 15 minutes. Preheat air fryer to 400 degrees and cook chicken for 20-25 minutes flipping half way through. Once finished, chop chicken into pieces.
- In a sauce pan bring water to a boil and boil eggs for 8 minutes. Remove from the pot and place into ice water immediately. After about a minute peel the shell off the eggs, rinse any remnants of the shell the chop the eggs.
To assemble the salad
- To a large bowl add chopped spinach and romaine. Toss the greens in some ranch if desired. Arrange the chicken, boiled eggs, onions, tomatoes, bacon, apples, cucumbers on top. Add crumbled feta and more ranch and enjoy!
Notes
- 1/3 cup balsamic vinegar
- 2 tbsp olive oil
- 2 tbsp brown mustard
- 1 tsp Italian seasoning
- 1/2 tbsp roasted garlic powder
- 1/2 tsp salt + pepper
