White Chicken Mushroom and Spinach Pizza



The best White Chicken Mushroom and Spinach Pizza. Fresh pizza dough, topped with Alfredo sauce and loaded with juicy balsamic-marinated chicken, hearty mushrooms, spinach, shallots, and tomatoes. It’s topped with ooey-gooey mozzarella cheese and baked until bubbly, golden perfection. This will become every one’s new favorite pizza. It’s loaded with toppings and packed with flavor.

As much as I love a traditional pizza- with red sauce, I’ve been loving white based pizzas more and more lately. Especially when they’re done right! The balsamic-marinated chicken truly shines in this recipe. It adds a sweet, tanginess that compliments so well with the salty cheese and the sweet tomatoes. Perfection in pizza form!

Prego sent me their new and improved Alfredo sauce, and I immediately knew I’d be making pizza with it—it couldn’t get any easier. While I made my crust from scratch, you can simplify this recipe by using premade pizza dough or flatbread like naan or even French bread.

This pizza turned out absolutely delicious, with layers of flavor in every bite. Inspired by my white chicken and garlic pizza, I dare say this one was even better.

How to make White Chicken Mushroom and Spinach Pizza

As with most pizza recipes, putting together this pizza is simple and requires a few key components: pizza dough, chicken, and toppings.

Bring pizza dough to room temperature before stretching.

Next, marinate the chicken by combining balsamic vinegar, olive oil, and seasonings in a bowl, and allow it to marinate for about 30 minutes.

In a skillet over medium heat, cook the chicken until it’s cooked through and develops a beautiful crust, about 7 minutes on both sides. Then, chop the chicken into chunks.

Stretch out the pizza dough, and add a layer of Alfredo sauce and minced garlic. Sprinkle shredded mozzarella cheese over the sauce, and then add the chopped chicken, mushrooms, spinach, and cherry tomatoes. Top with dollops of fresh mozzarella, more minced garlic, oregano, and flaky kosher salt, and drizzle of extra virgin olive oil.

Bake the pizza in a 500-degree oven for 10-12 minutes, or until the cheese is melty and the crust is golden. Remove from the oven and allow it to cool slightly. Top with fresh basil and red pepper flakes if desired, and enjoy this perfect, ooey-gooey, White Chicken Mushroom and Spinach Pizza.

Ingredients for White Chicken Mushroom and Spinach Pizza

  • Chicken thighs: Feel free to use chicken breast or tenderloins for this recipe.
  • Alfredo Sauce: to make things quick and easy, I used Prego’s new and improved Alfredo sauce.
  • Pizza Dough: I made my own pizza dough, but feel free to buy premade pizza dough or make this on flatbread or french bread.
  • Garlic: Minced garlic
  • Spinach: chopped.
  • Mushrooms: baby Bella.
  • Cherry Tomatoes: Sweet cherry tomatoes or grape tomatoes would work great!
  • Mozzarella Cheese: whole & shredded mozzarella.
  • Olive Oil: Be sure to use a good quality Olive Oil.
  • Balsamic vinegar: don’t miss this. This elevates the flavor of the entire pizza.
  • Spices: I used a variety of pantry staples. Oregano, salt, pepper, onion powder, garlic powder, All purpose seasoning and red pepper flakes.

Recipe Variations:

  • Make it with shrimp! Shrimp would be a perfect variation to this recipe.
  • Add more veggies: feel free to add your favorite veggies to this pizza.
  • Truffle: add a drizzle of truffle oil if you’re feeling frisky.

  • Pizza stone or large baking sheet

Ingredients
  

  • 2-3 chicken thighs
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp Badia complete seasoning
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup basalmic vinegar
  • 2 tbsp olive oil

For the Pizza

  • pizza dough
  • 3/4 cup Prego Alfredo Sauce use more if needed
  • 1/4 cup spinach chopped
  • 4 sweet tomatoes chopped
  • 3 cloves of garlic minced
  • 1/4 shallot thinly sliced
  • fresh mozzarella
  • 1/2 cup shredded mozzarella
  • oregano
  • red pepper flakes
  • flakey salt

Instructions
 

  • Position oven rack to 1/3 of the oven and preheat to 500 degrees (if using fresh pizza dough) If using flatbread OR naan bread, preheat oven to 400 degrees.
  • In a medium bowl, add cleaned chicken thighs and season with olive oil, Balsamic vinegar, Badia Complete seasoning, onion powder, garlic powder, salt and black pepper. Marinate for at least 20 minutes. In a skillet over medium heat, add 1 tbsp of olive oil and sear chicken until cooked through. Remove from the pan and chop into pieces.
  • Roll out pizza dough on a lightly greased cast iron skillet or baking sheet. Add a layer of Alfredo, shredded mozzarella, chopped chicken, mushrooms, spinach, shallots, tomatoes then globs of fresh mozzarella. Top with a drizzle of olive oil, oregano, and flakey salt.
  • Add pizza into preheated oven and bake for 11-12 minutes until the crust is golden and the cheese is melted and bubbly. Top with red pepper flakes if desired and serve with ranch or your favorite dipping sauce. Enjoy!
