Refreshing Blackberry Pine Mocktail
Spring is near and this Blackberry Pine Mocktail is the perfect drink to welcome the new season. It’s fresh it’s vibrant and did i mention Non-Alcoholic? It’s the perfect drink for all. Made with a homemade blackberry thyme syrup, pineapple juice, Lyre’s NA cane spirit, and fresh lime juice. The mocktail is shaken with ice and topped with a fizzy finish of sparkling water.

How to Make A Blackberry Pine Mocktail?
This refreshing mocktail is crafted with a homemade blackberry and thyme syrup, blended with Lyre’s Cane Spirit—a Rum inspired Non-Alcoholic Spirit—alongside pineapple juice, lime juice, and ice. Topped off with sparkling water, and garnished with fresh mint. This delightful concoction is the perfect sip to welcome the spring season.
Ingredients To Make Blackberry Pine Mocktail
Here’s what you’ll need
Lyre’s NA Cane Spirit: optional. Rum without the alcohol. It’s a alcohol substitute similar taste without the booze.
Blackberry thyme syrup: see below on how to make it. Feel free to use fresh blackberries. I prefer to make a syrup that way I don’t have to worry about seeds.
Pineapple juice: You can used homemade or canned pineapple juice.
Lime juice: If it’s not fresh, I don’t want it.
Mint: adds freshness to the mocktail and makes the perfect garnish.
Sparkling water: I used San Pellegrino sparkling water. Feel free to use any sparkling water you prefer.

How To Make Blackberry Thyme Syrup
Making simple syrup for cocktails and mocktails is quite easy. Here’s how to do it:
- In a saucepan, combine equal parts sugar and water.
- Add fresh or frozen blackberries and 2 sprigs of thyme.
- Simmer the mixture over medium-high heat, stirring until the sugar dissolves completely, which usually takes about 8-10 minutes.
- After about 6 minutes, gently mash the blackberries to release their juices.
- Allow the mixture to simmer for the remaining 4 minutes.
- Turn off the heat and let the syrup sit for a bit to infuse.
- Finally, strain the syrup into a clean mason jar.
- Store the syrup in the refrigerator for up to 2 weeks.

Refreshing Blackberry Pine Mocktail
Equipment
- cocktail shaker
- jigger
Ingredients
- 3 oz Lyre's Cane Spirit
- 1 1/2 oz Blackberry Thyme Syrup
- 4 oz Pineapple Juice
- 1 lime juice
- San Pellegrino sparkling water
- ice
- mint + lime to garnish
Instructions
- To a shaker combine Lyre's Cane Spirit, blackberry thyme syrup, lime juice and pineapple juice. Add ice and shake for 30 seconds.
- Add ice to serving glasses, then evenly pour the mocktail into both glasses. Top with sparkling water, garnish with a mint sprig and lime wheel, and enjoy.
